MIE ONGKLOK
Selamat malam teman-teman,Tadi sore aku bikin Mie Ongklok dan Sate Sapi Wonosobo, tapi maaf gak bikin video lengkap karena hujan dari siang, gelap banget cuaca jadi masaknya versi cepat. Nah mau cerita aja, Mie Ongklok Wonosobo ini ternyata ada beberapa versi teman-teman.
Dulu aku beberapa kali posting resep Mie Ongklok itu ndak pakai tahu bacem, seperti di warung Mie Ongklok terkenal yang pernah aku makan. Tapi minggu lalu waktu Pak Suami tugas ke Wonosobo aku dibelikan Mie Ongklok Pak Yadi yang katanya legendaris juga, yang ini ini pakai tahu bacem eh aku sama Yodha suka, cocok rasanya, jadinya Yodha request dibuatin yang pakai tahu bacem ini. Buat teman-teman yang belum tahu kuliner Mie Ongklok, Mie Ongklok adalah olahan Mie khas Wonosobo. Dinamakan Mie Ongklok karena mie-nya direbus pakai saringan khusus terus diongklok-ongklok gitu, dan direbus dengan kol. Kalau disajikan dengan kuah kental gurih manis pakai ebi, kalau ditaburi kucai biasanya disajikan dengan sate sapi dan tempe kemul, enak banget teman-teman, apalagi kalo disantap pas cuaca hujan begini, serasa seperti di Wonosobo dinginnya. Mie Ongklok versi Pak Yadi ini pakai Mienya Mie Pipih.
Resep Mie Ongklok 3 porsi
Bahan:
- Mie kering pipih, 1 pack
- Kol 3 lembar, potong kasar
- Daun kucai secukupnya, iris kecil2
- Bawang goreng secukupnya
- 3 tahu bacem
- 750 ml kaldu ayam atau air biasa
- 3 siung bawang putih
- 3 butir bawag merah
- 2 sdm ebi yang sudah dihaluskan
- 1/2 sendok teh merica bubuk
- 1 sendok teh gula pasir
- 1 sendok teh kaldu ayam bubuk plus garam sesuai selera
- 3 sendok makan kecap manis
- 4 sdm tepung tapioka, larutkan dengan 2 sendok air ( kalau kurang kental, boleh ditambahkan sedikit ya )
- Haluskan bawang merah, bawang putih.
- Tumis hingga matang, masukkan air dan bumbu-bumbu lain.
- Masak hingga mendidih.
- Koreksi rasa, jika sudah pas, sesuai selera, masukkan larutan tapioka, aduk rata hingga kuah mengental.
- Didihkan air, masukkan mie kering dalam saringan kawat, lalu masukkan ke air mendidih sambil di-'ongklok-ongklok' (di goyang-goyan) sampai mie matang.
- Tambahkan kol, masak sebentar hingga kol layu. Kol ini yang menciptakan cipta rasa unik teman-teman, terasa saat sudah dicampur dengan kuah kentalnya.
- Tuang mie dan kol di mangkuk, tuangi kuah panas.
- Sajikan dengan taburan kucai dan bawang merah goreng, serta sambal rawit.
- Bisa ditambahkan ayam suwir juga, tapi aku gak punya tadi. Karena aku sudah buat sate sapinya tadi.
