Bakso Ayam Kenyal Empuk


Hari ini kepengen bikin Bakso, tapi hanya punya daging ayam di freezer. Jadinya bikin Bakso Ayam aja. Tetep enak rasanya. Di sajikan bersama kuah kaldu ayam bening, rasanya seger sekali. 
Kebetulan kemaren bikin Batagor, Pangsitnya masih ada juga, jadi aku sajikan sama Bakso Ayamnya. Enak, jadi ada komplet isinya.

Membuat Bakso Ayam ini mudah sebenernya teman-teman, kuncinya adonan harus benar-benar halus dan lumat ya, terus waktu di haluskan daging ayam dalam kondisi dingin dari freezer, jadi waktu di giling nggak rusak proteinnya atau istilahnya tukang bakso, matang duluan sebelum di rebus. Kalau udah matang duluan, nanti baksonya tidak akan kenyal, tapi jadi lembek.

Jika pakai daging fresh, bisa di tambahkan sedikit es batu, tapi jangan terlalu banyak ya, karena es batu kan mengandung air juga, jika kebanyak adonan akan lembek. Oke, ini dia resepnya ya teman-teman, aku tidak pakai pengenyal, hanya pakai sedikit baking powder, hasilnya bisa membal, kenyal, empuk baksonya. Yuk di coba teman-teman.

Bakso Ayam Kenyal Empuk

Bahan:
300 gram daging ayam fillet dada tanpa tulang ya, potong kecil2, simpan di freezer dulu beberapa jam, biar dingin, jadi nggak perlu es batu untuk adonan
1 putih telur
2 bawang putih goreng
1 sdk mkn bawang merah goreng
1 sdk teh garam kasar
1/4 sdk teh merica
1/2 sdk teh gula pasir
1/2 sdk teh kaldu ayam
1/2 sdk teh baking powder double acting, aku pakai merk Hercules

Campur semua bahan di atas pakai chopper, proses beberapa kali tekan, on, off, on, off hingga halus, aku pakai @mitochiba_id, 3 menit udah halus.

Masukkan 3 sdk makan tapioka / sagu, proses lagi sebentar hingga adonan halus
Hangatkan air, bentuk adonan bulat2, masukkan ke air hangat
Lakukan hingga adonan habis
Didihkan, masak hingga bakso mengapung
Angkat, masukkan ke air es
Tiriskan
Sajikan dengan kuah bening

Untuk kuah kaldnya, aku pakai kaldu ayam bening ya, cara membuatnya di SINI 

Untuk bumbu kuahnya :
 
Cara Membuat  Kuah Bening :
1000 ml kaldu bening dari Ayam Kampung atau Ayam Pejantan
3 siung bawang putih, goreng, haluskan
1 batang sledri, ikat
Garam, gula, merica secukupnya
Didihkan semua bahan, koreksi hingga gurihnya pas sesuai selera

Sajikan Bakso kuah dengan kuah, sambal, kecap manis, dan taburan daun bawang serta bawang goreng jika suka.
